Mexican-Style Grilled Corn

Ingredients

Grilled Corn Ingredients

4 corn cobs, husks pulled back & silks removed
2 tbs cold butter
1 tsp chilli powder
¼ cup mayonnaise
¼ cup coriander, chopped
50g parmesan cheese, grated
Smoked paprika (to taste)
1 lime, cut into wedges


Salsa Ingredients

½ red onion, finely diced
1 fresh tomato
1 jalapeño pepper, seeded & diced
Salt & Pepper
½ lime, juiced
1 tsp coriander, chopped

Preparation
  1. Preheat grill to medium-high

  2. Rub ears of corn with cold butter

  3. Grill corn for 15-20 mins, until tender, turning to char evenly.

  4. Meanwhile in a small bowl, whisk together chilli powder into mayo & set aside.

  5. Combine the salsa ingredients and put in a small bowl.

  6. Transfer the corn to serving platter & slather each cob evenly with chilli mayo. Sprinkle with parmesan, coriander and smoked paprika. Serve with salsa and lime wedges.
